Feeding "special" Fishes

I have read in several posts that Koko has several "special needs" fishes. I am assuming these are little guys who have a floating tendancy. I have two such fish now. One was a "doorstep dump" that had been apparently subjected to countless rounds of high ammonia and nitrites and nitrates. He is a ryunkin, and does OK, but is always on the verge of floating. The other is my birthday fish, Nemo - a spectacular Oranda who is floaty and flippy if you even say boo at him.

How do you baby such fish? Is there any particular regiment that might work better than what I am doing? They always seem on the verge of something and they are a constant source of concern.
